RecipeOf The Week: Zucchini Bread

Zucchini Bread
3 eggs
1 1/2 cup of sugar
2 teaspoons of vanilla
1 cup of oil
1 teaspoon of cinnamon
3 cups grated, unpeeled zucchini
1 1/2 cups of raisins
3 cups of flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
Beat the eggs then add the sugar, vanilla, oil, and cinnamon.  Mix in the squash and raisins.  Combine and add remaining ingredients.  Mix well.  Bake in two 9X5 loaf pans at 350 degrees for 1 to 1 1/4 hours or until done.
