Overflowing With Delicious Vegetables

Fall vegetables are going strong.  Let's hope the weather holds out a little longer.  There have only been small amounts of frost damage.

Swiss Chard Yummmmmm

Potatoes, Joi Choi, Swiss chard, peppers, fall squash, and lettuce in this week's box.  You will be getting peppers every week because they are susceptible to frost.

John has been busy plowing and planting cover crops like buckwheat to help ass nutrients, control erosion and prepare the fields for next spring.  The fields are looking good right now and they are hoping for another rain this week to help finish the leafy greens before the temps get too low.

Just A Reminder

Please breakdown your boxes when you return them to the host house.  It keep the porches clean and it helps when Rue picks them up to pack them in his van to return them to the farm.

It only takes a few minutes to help out.

What Is Hiding In This Weeks Box?

Do I see a little pumpkin in there?  Sure looks like it but it is not.  It is actually an orange winter squash. You can use them like you would a pumpkin in pumpkin pie or butternut squash.  They are really nice bakes with butter and brown sugar or maple syrup on them.  But they are also good with no sweetener on them.

Recipe Of The Week: Chunky Tomato Soup

Chunky Tomato Soup

1 1/2 cups peeled, seeded, and finely chopped tomatoes
2 teaspoons of sugar
1/4 cup of butter
1/4 cup of chopped onions
3/4 cup of salt
3 cups of milk

Bring tomatoes and sugar to a boil: simmer 10-15 minutes.  Meanwhile, heat butter and saute butter for 5 minutes.  Blend in flour, then slowly add milk while stirring.  Cook and stir until thickened.  Add hot tomatoes,, stirring constantly. 
Variation: Process tomatoes in a blender before heating or use tomato juice.  Delete flour for a thinner tomato soup.

Good-Bye Summer, Hello Fall

Fall colors in a box this week.

Be sure to check out the recipe of the week.  You have just about all the ingredients in the box this week for it.

Just a sure to break down your boxes and place them neatly on the CSA host family's porch or driveway.  It makes for a cleaner environment for the homeowner and it helps Rue when he is transporting them back to the farm for John and Anna.

Recipe of The Week: Green Bean Potato Pancakes

Green Bean Potato Pancakes

1 1/2 cup of finely diced green beans
2 cups of grated potatoes
1/4 cup of chopped onions
2 large eggs, lightly beaten
1/2 teaspoon salt or to taste
1/8 teaspoon of pepper

Combine ingredients and fry in vegetable oil or q miture of butter and oil.
