Recipe Of The Week

Zucchini Chocolate Cake

1 1/2 cups of sugar
1/2 cup butter
1/4 cup vegetable oil
3 eggs
1/2 cup milk
1 teaspoon vanilla
2 1/2 cups of flour
1/2 cup cocoa
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
1/2 teaspoon of cinnamon
2 cups shredded peeled zucchini or summer squash

Cream sugar, butter, and oil.  Beat in eggs, milk, and vanilla.  Combine dry ingredients and add.  Stir in zucchini, pour into buttered 13x9 pan.  Bake at 350 degrees approximately 40 minutes.  Make your favorite icing or top with chocolate chips and nuts before baking.
