Pecan Sweet Potato Pie
1/4 cup of butter
1/2 cup of brown sugar
1 cup of mashed of mashed sweet potatoes
3 eggs slightly beaten
1/3 cup of corn syrup
1/3 cup of milk
1/2 teaspoon of salt
1 teaspoon of vanilla
1 cup of chopped pecans
1 unbaked pie shell
Cream the butter and sugar. Add potatoes and eggs. Mix well. Stir the remaining ingredients and pour into the unbaked pie shell. Bake at 425 degrees for 10 minutes. Reduce the heat to 350 degrees and bake another 35-40 minutes.
